Lava Lake Ranch invited local chefs to the ranch for a beautiful October day to tour the ranch, meet the lamb, learn the best ways of carving lamb and to enjoy a wonderful dutch oven lunch. Paul Kuber who is the Associate Professor of Meat Science at Ohio State University began the demonstration on meat carving by referencing a skinned lamb carcass that was hanging from a tree in front of the ranch house. He was sure to suggest ways to use parts of the lamb that the Chef’s may not be accustomed to using. Lava Lake Lamb is common on many menus throughout the Sun Valley area and and is in fact gaining much recognition across the U.S!
